Why Proving is important? Proving is an important aspect of bread and bun manufacturing. The dough,( of bread and bun ) when proved will result in golden brown colour & soft texture when baked. Proving chamber provides optimal conditions of temperature 31 deg C to 35 deg C & humidity 85 to 90% Rh. Both temperature & humidity can be separately set to desired level. During proving operation, the yeast will have sufficient food to effect a faster gas production. Therefore it is necessary that there is sufficient diastatic activity in the flour in order to produce fermentable sugars for yeast to carry out its function efficiently during the critical stage of proving.
